Alicia Thelin's Thanks Popcorn Holder from 350 Cards & Gifts

Candied Popcorn by Alicia Thelin

Ingredients:

  • 20 cups popped popcorn
  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1 (3 oz) pkg. flavored gelatin
  • 1 Tbsp. corn syrup
  • 3 Tbsp. water
  • 1/2 tsp. baking soda

1. Mix butter, sugar, gelatin, corn syrup and water into a heavy bottom sauce pan.
2. Stir and bring to a boil, lower heat and allow to boil for 4 minutes WITHOUT stirring.
3. Remove from heat and add baking soda, stir until foamy.
4. Pour over popped popcorn in large metal bowl.
5. Stir/fold with rubber spatula to coat evenly.
6. Place in 300 degree oven for two 15 minute cycles, stirring after each.
7. Allow to cool.

    I made this recipe tonight after seeing it on here and it is soooo yummy! I’m wondering though if 300 degrees is a little too high. The popcorn on top turned brown after the first 15 minutes. It still tasted delicious though. Would it still turn out right if I turned the heat down a bit or maybe it just needs more turning than just the one time?? Thanks!

    Hope you all like it!

    Paula – make sure the rack in your oven is down low, and feel free to adjust the heat. Your oven could easily run hotter than mine.

    Thanks Alicia, I didn’t even think about the rack. I will try that next time to see if that works out better. We did just get a new oven so you’re probably right about it running a little hotter =) My kids loved the popcorn and have already put in their orders for different flavors. Thanks for such a yummy recipe!!
